Couscous is not a grain, but it is a grain product. Coarsely ground durum wheat is rolled into tiny little balls, which have the appearance of grain. So couscous is also a sort of pasta!
Suma organic couscous is quite fine, and can be prepared by adding very hot water and allowing it to plump up. Zatoun couscous is larger, darker, and has a distinctive flavour. Steam for 20 minutes minimum.
