Notes

50gm dry weight produces one portion as part of a meal.

Preparation
Put the beans in the bottom of a bowl and cover well with cold water.
Allow the beans to soak overnight.

Strain off the soaking water and put the beans in a saucepan.
Add fresh cold water to cover the beans to a depth of 5 cm.
Cooking
Bring the water to a boil, and skim off any scum that forms. Cover the pan, and then turn down to a simmer.
Simmer for 60 to 90 minutes testing a bean every 10 minutes or so after the 60 minute mark. The beans are cooked when the test beans are soft but not mushy.
Strain off the water in a colander and wash either under cold runnng water or with freshly boiled water.
