Apricots in Orange Marinade

A delicious tangy fresh dish.
Breakfast with a zing, or just a light sweet course.
Serves two. Ascribed to Scotland.

Ingredients

150 gm FAIRTRADE dried apricots
4 small FAIRTRADE oranges
FAIRTRADE Sources

Method

Quarter the dried apricots (Tropical Wholefoods recommends using scissors).
Just cover the apricots with boiling water.
Juice the oranges on a "lemon squeezer", and add the pulp and juice, but not any pips, to the apricots.
leave to cool, and refridgerate overnight.

To serve

Serve in a small bowl decorated with a mint leaf.
