Cookies from Armenia

Country of origin: Armenia . A sort of "roll your own biscuit".

Ingredients

200 gm butter
200 gm shortening
200 gm Fair Trade shredded coconut
800 gm rolled oats
400 gm FAIRTRADE Raw Cane Sugar
800 gm plain flour
10 ml baking powder
5 ml baking soda
200 ml boiling water
FAIRTRADE Sources
Sugar
Coconut
Raisins
Sultanas
Coffee

Method

Let the boiled water cool until lukewarm.
Mix butter, shortening, coconut, oats, sugar, flour, baking powder, baking soda and salt using your fingers until dough reaches the consistency of pie crust.
Add the lukewarm water and work into the dough.
Roll the dough into 2 cm balls, and flatten with a fork or press.
Place on a greased baking tray and bake at Gas Mark 6 for 10 minutes.

To serve

Serve with FAIRTRADE coffee.

Variation

Add a handful of FAIRTRADE raisins or FAIRTRADE sultanas to the dough.
