A simple, high flavour sauce for traditional English fare.

MethodCookingCombine the ingredients in a saucepan. heat to boiling and then reduce to a simmer for 20 to 30 minutes. The sauce is ready when the volume is reduced by about half. To serveServe with puy lentils, or with high flavour meats such as duck.This sauce could also be used with Bollito Misto. VariationFrench / Canadian variations seem to use a grated (small) onion and a little (5 ml) Dijon mustard, but no spices or honey. |
