Luxembourg Stew

This is a hearty stew that brings back memories of working in Luxembourg in early 1999. I wonder if that coach party is still in the bock?
The rich flavours are typicial of Luxembourg cuisine .
Serves 8 portions.

Ingredients

1 kilo veal shoulder or stewing beef
70 gm plain flour
100 gm butter
1 large onion
2 large cans chopped tomatoes
1 bottle FAIRTRADE beer
6 FAIRTRADE cloves
5 ml salt
2.5 ml thyme
2 ml crushed rosemary
2 ml paprika
8 gingersnaps
30 ml FAIRTRADE lemon juice

Method

Cut the beef into 1 inch cubes.
Slice the onion
Coat the beef (veal) in flour. Brown in a little of the butter in a saucepan. Remove meat.
Add remaining 2 tablespoons butter and onion to saucepan. Saute until golden.
Add veal, tomatoes with liquid, beer, and seasonings. Cover and simmer 1 hour.
Season with salt and pepper to your taste.
Moisten gingersnaps with a little water; crush. Stir into meat. Simmer 5 minutes more. Add lemon juice; mix well.

To serve

Serve over rice, or with pasta, or with a few FAIRTRADE potatoes.
The traditional dish would be accompanied by potatoes.

Variation

Other red meats can be substituted for the beef.
