Soak the butter beans overnight. CookingCook the butter beans in the usual way (boiling to simmering water 90 minutes), with a little ( 2 good pinches) salt. Assembly
When the beans are cooked, drain and transfer to a salad bowl. To serve
Serve at room temperature. VariationsOther white beans can be used. e.g. Cannelini Beans. |
