Butter Bean Salad

Succulent butter beans in a herby oil dressing.
This is a Greek style dish.

Ingredients

50 ml Equal Exchange FAIRTRADE brazil nut oil
to taste salt
to taste FAIRTRADE freshly ground black pepper
500 gm dry weight butter beans
lots and lots fresh parsley
a little aromatic fresh herb

Method

Preparation

Soak the butter beans overnight.
Wash and chop the herbs.

Cooking

Cook the butter beans in the usual way (boiling to simmering water 90 minutes), with a little ( 2 good pinches) salt.

Assembly

When the beans are cooked, drain and transfer to a salad bowl.
Add the herbs, the oil and a little more salt. Turn gently. Season with black pepper to taste.

To serve

Serve at room temperature.
May be used as a meze dish, or as a side dish, or as a substitute for animal protein for a vegan meal.
Meze: Serve with FAIRTRADE Chardonnay.

Variations

Other white beans can be used. e.g. Cannelini Beans.
