Butter Beans

In the UK we know the large white bean as a butter bean.
The origins seem to be Andean and derived from the green Lima bean.
This page contains the basic instructions for cooking the beans in UK.
There are no Fair Trade butter beans as yet, and so this recipe is for use as a component of other dishes.

Ingredients

75 gm dry butter beans per portion

Method

Preparation
Put the beans in a bowl and cover with plenty of cold water.
Leave to soak overnight (12 hours) or longer.
Cooking
Drain the beans and rinse them, and then put them in a pan of boiling water.
Bring to the boil, cover and simmer for 90 minutes.
Once cooked (test a bean for tenderness) discard the cooking water and use the beans hot or allow to cool as necessary.
