Cassava Cake

Fijian sweet cake, goes with breakfast or as a snack.

Ingredients

500 gm Cassava
150 ml coconut milk
100 gm FAIRTRADE brown sugar
FAIRTRADE Sources
Sultanas
Fruit Juice
Sugar

Method

Preparation
Peel the cassava and then grate using the coarse side of the grater.
Mix the cassava with the sugar.
Progressively add the coconut milk to make a thick mixture like a dough.

Cooking
Grease the inside of a cake tin with butter or margarine.
Pour in the mixture, and bake at Gas Mark 6 for 45 minutes checking from time to time for burning.

Assembly
Turn out and cool.

To serve

Firm but moist, with a thin skin, serve along with FAIRTRADE coffee.

Variation

Add a generous handful of Traidcraft FAIRTRADE Sultanas soaked in FAIRTRADE Orange juice on high days and holidays.
