Chicken Ossobuco

Italian braised chicken main course.
This recipe is an adaptation from braised red meat, but works well with poultry.
In Italy search out the locally grown tomatoes for great flavour.
This dish is traditionally served with a risotto style rice, and serves 4.

Ingredients

4 Chicken breasts
25 ml Equal Exchange Fair Trade Palestinian olive oil
4 large (Italian) tomatoes
20 ml chopped fresh parsley
50 gm plain flour
100 ml FAIRTRADE white wine
1 clove of garlic
zest of a FAIRTRADE lemon

Method

Peel and crush the garlic.
Wash and slice (thick-ish) the tomatoes.
Coat the chicken breasts in flour seasoned with salt and pepper.
Heat the oil in a pan and brown the chicken on both sides.
Add the wine and cook over a low heat for 10 minutes.
Add the tomatoes and garlic and cover the pan.
Simmer until the chicken is tender (about 10 minutes).

To serve

Sprinkle with FAIRTRADE lemon rind and chopped parsley to serve.

Variation

This is a scaleable recipe, vary according to the number of people to feed.
Use a lamb or veal steak in place of the chicken.
