Preparation
Drain and rinse the chickpeas.
Put the couscous in a mixing bowl and add the lemon juice and 350 ml boiling water.
Stir and allow to stand for about 5 minutes.
Most but not all of the liquid should by then be absorbed.
Add the chickpeas and the sultanas, and check the couscous.
If necessary gently heat the mixture a little more either in the microwave or in a saucepan.
The couscous needs to be soft but not completely dry.
Add salt and pepper to taste.
Variations
Start with 100 gm dry chickpeas and cook in the usual way.
