Couscous with Sultanas

Crunchy couscous side dish with a hint of sweetness.
This is a Senegalese dish making four good serving portions.

Ingredients

to taste salt
to taste FAIRTRADE freshly ground black pepper
150 gm Fair Trade Palestinian couscous
50 gm FAIRTRADE sultanas
400 gm can Suma chickpeas
10 ml FAIRTRADE lemon juice
350 ml water

Method

Preparation

Drain and rinse the chickpeas.
Put the couscous in a mixing bowl and add the lemon juice and 350 ml boiling water.
Stir and allow to stand for about 5 minutes. Most but not all of the liquid should by then be absorbed.
Add the chickpeas and the sultanas, and check the couscous. If necessary gently heat the mixture a little more either in the microwave or in a saucepan. The couscous needs to be soft but not completely dry.
Add salt and pepper to taste.

Variations

Start with 100 gm dry chickpeas and cook in the usual way.
