Curry Sauce

Country of origin: England. Creamy white sauce with a curry flavour.

Ingredients

50 gm butter
50 gm flour
250 ml milk
25 ml curry powder
to taste salt
to taste FAIRTRADE freshly ground black pepper
50 ml mayonnaise
50 ml double cream
1 red capsicum pepper
100 gm FAIRTRADE sultanas
6 to 8 gherkins

Method

Preparation

De-pith the pepper and chop very fine.
discard the ends of the gherkins and slice fine.
Sift together the flour and the curry powder together with a little salt and pepper.

Cooking

Begin to melt the butter in a saucepan over a low heat.
Separately add the milk gradually to the flour stirring so as not to make lumps.
Stir the milky flour to the butter, and then add the mayonnaise and cream.
Warm through.
Add the chopped pepper, chopped gherkins and sultanas.

To serve

Serve hot over chicken nuggets and rice.

Variation

For a sharper flavour use natural yoghurt rather than mayonnaise.
This recipe will tolerate other fruit in place of the sultanas.
A few toasted cashews would intruduce more of a crunch to the texture.
A family favourite is a good quantity of fried mushrooms.
