Lamb - baked with yoghurt

Lamb is a juicy meat, and this recipe makes the most of it. The eggs and yoghurt form a savoury custard. A spectacular Albanian dish.

Ingredients

A joint roasting lamb
60 ml margarine
50 gm FAIRTRADE Basmati brown rice
to taste salt
to taste FAIRTRADE freshly ground black pepper
Sauce
15 ml plain flour
60 ml margarine
1 large carton natural yoghurt
3 hens eggs
to taste salt
to taste FAIRTRADE freshly ground black pepper

Method

The Roast

Cut the meat into serving portions as per the number for dinner.
Place in an oven dish with the margarine and season well. Bake in the pre-heated oven at Gas Mark 5 for 1 hour, basting the meat from time to time.
Add the rice to the meat juices.

The Sauce

Saute the flour in the margarine until well mixed.
Mix the yoghurt, eggs, salt and pepper until well blended.
Then stir into the flour saute and mix well.
Pour over the lamb.
Bake in the oven at Gas Mark 5 for 1 hour.

To serve

Serve hot with jacket potatoes, spicy carrots and peas.
