Scottish Pancakes

Delicious eaten hot on a winter Saturday afternoon, with a touch of FAIRTRADE Honey.

Ingredients

125 gm Self Raising flour
2.5 ml Baking Powder
1 pinch salt
1 egg
salt and FAIRTRADE pepper
30 ml FAIRTRADE caster sugar
splash milk
125 gm plain flour
110 ml milk
FAIRTRADE Sources
Lemons
Oranges
Sugar
Honey
Jam
Marmalade
Raisins
Sultanas

Method

Sift the flour through a seive to remove all lumps.
Beat the egg and sugar together, and add a little milk to the egg. Pour the mixture into the sifted flour and other dry ingredients and beat into a smooth batter with a wooden spoon.
Heat a little sunflower oil in a large frying pan and pour spoonfulls into separate "pancakes". After about 30 seconds turn over (first side should be golden brown).

Variation

Add 50 gm FAIRTRADE Sultanas to the mixture before frying.

To serve

Serve hot with a dob of butter, and FAIRTRADE Jam.
