Peel the carrots and grate into a bowl.
Wash the apples, remove the cores, and chop fine or grate into the bowl.
Combine the horseradish, olive oil, vinegar and sugar in a small bowl,
and then add to the carrots and apples.
Season with salt and decorate with walnut halves.
To serve
Serve chilled.
